Tilapia ice cream hogs the limelight anew

The CLSU tilapia ice cream was featured once again on TV last December 6 in the ABS-CBN’s popular morning program “Umagang Kay Ganda” in the first episode of its special segment entitled “ANO D.A.W.?” hosted by Doris Bigornia, Amy Perez and Winnie Cordero.

Employing a conversational and question and answer style of providing information, the hosts were able to discuss the details relative to the production of the said novelty ice cream, its distinctive qualities as well as its nutritional value. Such was augmented by interviews with Prof. Dana Vera Cruz, chair of the CLSU Department of Hospitality Management - College of Home Science and Industry (DHM-CHSI); and Dr. Tereso A. Abella, director of the CLSU Freshwater Aquaculture Center and Vice President for Academic Affairs. Prof. Vera Cruz developed the tilapia ice cream upon the suggestion and support of Dr. Abella.

Prior to this, ABS-CBN’s TV Patrol North Central Luzon featured the CLSU Tilapia Ice Cream as “Nag-iisa sa Mundo” last December 5. Dr. Abella, being one of the proponents of the specialty ice cream, was also interviewed by the TV station and answered queries about the nutritional value of the product and the breeds of tilapia that are used as main ingredient.

To recall, the tilapia ice cream was first launched during the 2nd Asian & Western Cuisine: Tilapia Food Festival, a culminating event of the CLSU-BS Hotel and Restaurant Management students who showcased original tilapia recipes. It was during this event that it first caught the attention of the Philippine Daily Inquirer which came up with a story about it. Several radio stations and TV programs such as “Kapuso Mo, Jessica Soho” (GMA 7); “Unang Hirit”, “Rated K” (ABS-CBN) and “Landmarks” (NET25) also aired their respective features about the CLSU Tilapia Ice Cream.

According to Prof. Vera Cruz, there is now a growing demand for tilapia ice cream which prompted the university to propose for its possible commercialization through funding support from select government institutions. Patenting of the product is also being worked out, Prof. Vera Cruz also said. Tilapia ice cream is available at the Chives cafe & Patisserie, the food and beverage laboratory of the CLSU BSHRM students operated and managed by the DHM-CHSI.
